This is a great versatile pizza to get the kids/teens involved – you can make extras to freeze for any meal during the week.
Ingredients:
2 gluten-free wraps (or wholegrain pita breads)
2 tbs tomato paste
50g baby spinach leaves
60g mozzarella cheese, grated
6 cherry tomatoes, quartered
40g ham, thinly sliced
2 eggs
1 tsp Italian dried herbs
1/2 tsp chilli flakes (optional)
Method:
1 Preheat oven to 230°C. Spread wraps/pita breads with tomato paste, scatter over spinach leaves and sprinkle with cheese. Add tomatoes and ham.
2 Crack egg into the centre of each pizza and sprinkle with herbs and chilli. Bake for 10 minutes or until egg has cooked.
