Ingredients

300g firm tofu, 2cm diced

1 tbs sesame oil

300g sweet potatoes, 2cm diced

4 corn tortillas

50g red cabbage, very finely sliced

1/2 avocado, 2cm diced

200g cottage cheese

1 green chilli, sliced (optional)

1/4 bunch coriander, leaves picked

1 tbs lime juice

salt & pepper, to taste

Method

1 Preheat oven to 220°C and line a baking tray with baking paper.

2 Toss tofu with oil and set aside

3 Season sweet potato with salt and pepper and roast for 30 minutes or until cooked.  Add tofu to tray for last 5 minutes of cooking.

4 Warm tortillas in oven for a few minutes. Top with cabbage, tofu, sweet potato, avocado, cottage cheese, chilli and coriander. Season with salt and pepper, squeeze over lime juice to serve.
